The first thing that comes to mind when thinking of an industry that represents Niigata Prefecture is sake (seishu). Sake is also known as the "national drink" and is a traditional culture that represents Japan and that we can be proud of around the world. If the techniques involved are not passed down in the future, it will disappear.
With the aging of brewers and a lack of successors, we have decided to take over this sake brewery with over 200 years of tradition, even though we are complete outsiders to the industry. The fundamentals of sake brewing were directly taught to us by the previous president, who was also a master brewer, and we will continue to make "sake that is close to people", just as we have done until now. In addition, by introducing cutting-edge equipment and partially automating the process, we aim to provide more stable quality throughout the year.
This business is directly connected to the "revitalization of the region" through the creation and maintenance of jobs, and the preservation of local customs, culture, and traditions. We consider it an important mission to play a part in this in the future.
