The first thing that comes to mind as an industry that represents Niigata Prefecture is "sake". Sake is also called "national sake" and is a world-class traditional culture that represents Japan, and its technology will disappear unless it is inherited in the future.
Amid calls for an aging maker and a shortage of successors, we have decided to inherit the sake brewery that has a tradition of more than 200 years, even though it is a completely outsider industry. The root of sake brewing is the direct transmission from the former president, Mr. Mori, who inherits the same "sake that is close to people". In addition, we aim to provide more stable quality throughout the year by introducing state-of-the-art equipment and partially automating it.
This business is directly linked to the "revitalization of the region" such as the creation and maintenance of employment and the inheritance of climate, culture and traditions. Eventually, I think it is an important mission to play a part in this area.
