When thinking of an industry that represents Niigata Prefecture, the first thing that comes to mind is sake ( refined sake ) . Sake is also known as the "national drink," and is a traditional culture that represents Japan and that we can be proud of around the world. However, if the techniques involved are not passed down in the future, it will disappear.
With the aging of brewers and a lack of successors becoming a concern, we have decided to take over this sake brewery, which has a tradition of over 200 years, despite being complete outsiders to the industry. The fundamentals of sake brewing were taught to us directly by our previous president, who was also a master brewer, and we will continue to make "sake that is close to people," just as we have done up until now. Furthermore, by introducing cutting-edge equipment and partially automating the process, we aim to provide more consistent quality throughout the year.
This project is directly linked to the "revitalization of the region" through the creation and maintenance of jobs, and the preservation of local customs, culture, and traditions. We see it as an important mission to play a part in this in the future.
